Sugar Faces The Cold & Warms Up With These Peanut Butter & Zucchini Pupcakes

This morning I went outside, and I can officially say “the cold weather is here.”

After months of spring fever, summer warmth, and fall light jacket breeze, the cold weather has made an appearance.  Honestly, I’m not ready for it.  The days come to an end much quicker and the nights are much darker.

The cold weather also makes my walks a lot less pleasant.  Mom tends to bundle herself up in the thickest coat she can find.  I’d be open to wearing a coat too, if I didn’t hate wearing clothes so much.  So, I’m forced to face the cold with just my fur as a cover.

Honestly, cold weather and I have never gotten along.  I’ve never been a fan of the frigid wind hitting me in my face.  I’m more inclined to stay in the house in the warm cozy heat.

However, walks are definitely necessary.  Whether it’s cold outside or not, I need the exercise.    Being cooped up in the house all day, every day isn’t good for any pup (or human).   So, although I’d rather stay in during these colder months, I choose to focus on the bigger picture.  The end result.  The inspiration of every little step I take.

Instead of focusing on the challenge, I choose to focus on the treat at the end of the journey.

After every walk, Mom gives me a chicken treat.  And, believe me, that little chicken treat makes all of the cold weather I’ve had to endure worth it.  All the days where I have to walk against the wind are suddenly forgotten.

In life, we all have to do something that we don’t necessarily want to do.  I don’t like the cold weather, but I have to walk in it to get the exercise I need.  Mom doesn’t necessarily like her commute to work, but she does it to take care of herself and me.

When we’re faced with challenges, chores, or “adulting” responsibilities that we don’t want to do, sometimes it’s better to focus on the treat at the end.  It doesn’t make those tasks any less boring, obnoxious or grueling.  However, it does give it purpose.  It gives you a little joy you can look forward to as you’re walking through the cold bitter weather.

So, whether it’s a chicken treat, a chance to listen to your favorite Morning Show in your car or an extra hour of sleep the next day, use that as your focus.  It’ll make the journey worth it, even when you don’t want to do it.

  • 12 Mini Pupcakes

Ingredients

Peanut Butter & Zucchini Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Tablespoon Pure Honey
  • 1 Tablespoon Creamy Peanut Butter (unsalted with no added sugars)
  • 1 Egg
  • 1/4 Cup Diced Zucchini

Peanut Butter Frosting (Optional)

  • 1/4 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

For Peanut Butter & Zucchini Pupcakes

  • 1Preheat oven to 350° F. Line 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt, honey, peanut butter and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Stir in diced zucchini.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 8Spread or pipe peanut butter frosting onto the pupcakes. (optional)

For Peanut Butter Frosting (Optional)

  • 1In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy.
  • 2Spread or pipe peanut butter frosting onto the pupcakes.
