What if everyday was Monday? We’d probably spend a bulk of our time trying to shake off those Monday blues. Get this. What if all of Beyoncé’s albums were nothing, but 12 tracks of “Crazy in Love?” We’d have no Lemonade. And that my loves, would be absolutely unfortunate.
Essentially, life without variety is the same story told over and over again. It’s colorless and stale. It’s a life without growth, excitement, and an excuse to daydream while sitting in your cubicle at work.
Variety is more than the spice of life. It’s the freedom of expression.
Speaking of spice. Food is a great way to “spice up your life” (pun intended). It’s also a lot deeper than enticing aromas and happy taste buds. Food is wisdom. It’s the stories shared at the table. Food is laughter and bonding. It’s a colorful variety of lessons, traditions, and recipes gifted from one generation to the next.
Food is adventure. It’s making mistakes, embracing culture, and even the excitement of discovering your own values. As Michael Pollan stated in his interview with Oprah Winfrey on Super Soul Sunday…

Ingredients
Blueberry Pineapple Bundt Pupcakes
- ½ Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Olive Oil
- 1 Tablespoon Pure Honey
- ¼ Cup Coconut Milk
- ⅛ Cup Pineapple Juice
- ¼ Cup Blueberries
- ½ Cup Pineapple Chunks
- 1 Egg
Instructions
Yields: 2 Mini Bundt Pupcakes
For Blueberry Pineapple Bundt Pupcakes
- Preheat oven to 350°
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, honey, coconut milk, pineapple juice, and egg. Beat on medium speed until combined.
- Add dry ingredients into the mixture and blend until mixed.
- Add blueberries to mixture and blend until mixed.
- Place pineapple on several layers of paper towel to drain well. Arrange pineapple chunks in the mini bundt baking cake pan.
- Fill each 4-1/8-inch by 2-inch mini bundt pan cavity with pupcake mixture. Bake for 20 – 22 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
