These Kale-Apple Pupcakes take my mind off the fact that some sort of medicine is in my horizon.
I guess it gives me a boost of courage. Maybe these little kale-apple pupcakes do for me, what spinach seemed to do for Popeye. We all need a little shot of courage now and again. Especially when we need to stand up to that nasty medicine.

Ingredients
For Kale-Apple Pupcake
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- 1 Cup Fresh Baby Kale
- 1 Tablespoon Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 1 Egg
For Apple Frosting Frosting
- ½ Cup Unsweetened Applesauce
- ¼ Cup Brown Rice Flour
Instructions
Yields: 12 Mini Pupcakes
For Kale
- Wash 1 cup of fresh kale thoroughly and discard stems.
- Add kale and 3 tablespoons of water into a pot
- Cook kale on low for 15 minutes until tender. Once kale is cooked down you should end up with about ¼ cup of kale.
- Puree kale in blender, or finely dice it while it’s still hot.
- Set aside and let the kale cool.
For Kale-Apple Pupcake
- Preheat oven to 350° Line 1.75” inch mini-muffin pan with paper baking cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, applesauce, and egg. Beat on medium speed until combined.
- Add pureed or diced kale. Beat on medium speed until combined.
- Add dry ingredients into the mixture and blend until mixed.
- Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe apple frosting on the pupcake.
For Apple Frosting
- In large mixing bowl beat applesauce and flour together on medium speed. Mix until smooth. You may have to add more flour to get the consistency you want. You don’t want the frosting to be too runny.
Notes
- For garnish you can add a slice of apple to the top of the pupcake.
