The world’s most powerful questions and solutions start with two simple words…
“What if…?”
“What if people could fly?” “What if I could request a ride home with one tap of a button?” Or even, “What if I tilt my head at just the right angle? Will my human give me a treat?”
In one way, shape, or form those two words have been inspiring change and forward movement since the beginning of time. Those two words have disrupted entire industries, challenged us to look beyond pure logic, and encouraged us to believe in possibility. Albert Einstein said…
“Logic will get you from point A to B. Imagination will take you everywhere.” Share on XImagination is the moment we see beyond what’s right in front of us. It begins with “What if…?” Imagination is the moment our hearts convince our minds to relax and stretch its way of thinking. Without imagination there is no change. So, we definitely need it to continue to grow and evolve.
Summer, in our opinion, is the best time to let our imagination run free with wild thoughts. Not only is the weather warmer and days longer, but it’s also the time where we all make a conscious effort to actually relax. The more relaxed and rejuvenated we feel, the freer our minds are to imagine all those “what if’s.”
Prime example. On a sunny summer Sunday, Mom simply asked herself “What if I took these extra ingredients and made them into a pupcake for Sugar?” After I pretty much devoured the pupcake, Mom asked herself “what if I could create a space that combined my love for baking, writing, take pictures, and Sugar?” Thus, Pupcake Sugar was born. A creative space for Mom and a chance for me to enjoy some delicious homemade treats. It’s a complete win-win.
These Peanut Butter “Woofie” Pies are dedicated to all those “what if” moments your pup has ever had.
We also believe that every pupcake has a love story. So, while your favorite pup is PUPPY LOVIN’ on these pupcakes, we’d love to hear from you.
Discuss a time when you asked yourself “What if…” Where did your imagination take you?
Please share your pupcake story in the box below.
And, after you’ve tried this recipe please share it with us @pupcakesugar on Instagram, Facebook, Twitter, or all three. We’d love to see how they turned out for you.
Ingredients
Peanut Butter Cookies
- ½ Cup Creamy Peanut Butter (unsalted with no added sugars)
- ¼ Cup 100% Pure Maple Syrup
- 1 Egg
- 1 Teaspoon Baking Powder
Coconut Cream Filling
1 Can Coconut Cream (We used Let’s Do…Organic Heavy Coconut Cream)
Instructions
Yields: 6 “Woofie” Pies
For Peanut Butter Cookies
- In a large bowl, add peanut butter, maple syrup, and egg. Beat on medium speed for about 1 minute or until combined. Note that the batter will be soft.
- Refrigerate mixture in the bowl for 45 minutes.
- Approximately 10 minutes before you’re ready to bake, preheat oven to 350° Line the baking sheet with parchment paper so the cookies won’t stick.
- Remove mixture from refrigerator. Stir in baking powder.
- Scoop about 1 tablespoon of batter, and place on the cookie sheet approximately two inches apart. However, if you don’t want to bake all at one time you can refrigerate the excess batter until you’re ready to bake again.
- Bake cookies for 10 – 12 minutes or until the top of the cookie is golden brown. (I baked for 12 minutes).
- Remove cookies from the oven, and let cool on the baking sheet for 5 to 7 minutes. Afterwards, remove from baking sheet and continue cooling on a wire rack.
- Spread coconut cream onto one cookie. Place another cookie on top to make a sandwich.
For Coconut Cream Filling
- Refrigerate coconut cream over night to allow it to harden.
- In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
- Spread coconut cream onto one cookie. Place another cookie on top to make a sandwich.
Notes
- Keep “woofie” pies refrigerated until you’re ready to serve to your pup. The coconut cream on will melt if it sits out too long.
- This recipe is for a fun treat ONLY. It should not replace your dog’s regular meals. Please consult with your vet on the best plan for your dog’s diet.
How long can you store them in the fridge and how long can you freeze them?
Thank you for reaching out. I would store these in the freezer. They’ll last 3-4 weeks.
