She’s right, I didn’t realize how strong I am.   She smiled, grabbed Lamb Chop and handed it back to me. It’s a good thing too because then I could keep playing with my first toy choice instead of settling for something else. So if strength means we don’t settle, and the things we want come right to us, then I’m all for it.

Ingredients

Strawberry Shortcake Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • ¼ Cup Olive Oil
  • ⅓ Cup Plain Greek Yogurt
  • 2 Tablespoons Diced Strawberries
  • 1 Egg

Strawberry Shortcake Filling & Frosting 

  • ½ Cup Plain Greek Yogurt
  • ½ Cup Brown Rice Flour
  • 2 Tablespoons Maple Syrup
  • ¼ Cup Diced Strawberries

Instructions

Yields: 12 Mini Pupcakes

 For Strawberry Shortcake Pupcakes

  1. Preheat oven to 350° Line 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour and baking powder. Set aside.
  3. In a large mixing bowl add olive oil, Greek yogurt, strawberries, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Cut small hole in middle of pupcake. Fill pupcake with diced strawberries.
  7. Spread or pipe strawberry shortcake frosting onto the pupcakes.
  8. Add diced strawberries on top of pupcake for garnish (optional).

 For Strawberry Shortcake Frosting

  1. In large mixing bowl beat flour, Greek yogurt and maple syrup together on medium speed. Mix until creamy.
  2. Spread or pipe strawberry shortcake frosting onto the pupcakes.
  3. Add diced strawberries on top of pupcake for garnish (optional).
