I’m finally finished.
After months of crafting, planning, prepping and messing up a few recipes, my Pupcake Sugar menu is finally completed. Building this menu was one of the most challenging things I’ve done in a long time.
Sure, I love to bake. But, this time baking pupcake was a little different. I had to create pupcake recipes that pups other than my family and friends would like. Also, I was confined to my human’s schedule.
I could only bake pupcakes when she wasn’t home. And, I had to make sure that I put everything back in its exact space so that she wouldn’t suspect anything. That left much less time for me to experiment. However, I got it done.
Now, the only thing left to do was to get some feedback about these awesome pupcake flavors that I came up with. After a lot of brainstorming, I came up with the idea of doing a pupcake taste testing. It was the perfect way to not only get some feedback about my pupcakes, but also a great way to build a little buzz about my new pup business venture.
It was a great idea, but pulling this off even seemed almost impossible. I was a little strapped for cash at the moment, and only knew a handful of pups that I could actually invite for the testing. Quite frankly the pups I was going to invite tend to only like the simple flavor and wouldn’t necessarily even try those pupcake flavors that seemed a bit new.
After thinking a little deeper, I remembered that I got a lot of great feedback from pups that sampled my winning pupcakes at The Lounge bake-off. I also remembered that a local pup media site gave me a very positive review and raved about how delicious my pupcakes were to their readers.
So, I reached out to them to see if they’d be willing to partner with me on this pupcake tasting. In order to solve the need for more cash, I decided to charge a fee to cover the cost. And, I also made this pupcake testing a “private pup tasting” with a limited number of seats. This made the event a lot more exclusive and would make pups want to share about it even more.
Before I knew it, this pupcake taste testing idea I had was becoming a reality. And, those obstacles that seemed to be there became a base for the vibe of my event. In the words of J. Cole…

And, girl did my dreams take shape. Not only did I sell out my first pupcake taste testing, but all the pups gave great reviews. I was able to get real feedback on what pupcake flavors worked and what didn’t. Some of the comments from the pups became inspiration for pupcake flavor names.
The success of this pupcake tasting also proved that I was on the right track with my pup business venture. Pups shared their experience at the event on pup social media pages, which created more requests to attend events from other pups.
It also created more publicity for Pupcakes Sugar. This pupcake tasting event definitely shows that amazing things can happen when you believe in yourself.
These Mango Spinach Oatmeal Muffin Pupcakes are dedicated to dreaming “like you’ve never seen obstacles.”

- 12 -14 Mini Pupcakes
Ingredients
Mango Spinach Oatmeal Muffin Pupcakes
- 1/2 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 1/2 Cup Quaker Oats
- 2 Tablespoons Olive Oil
- 1/3 Cup Plain Yogurt
- 1 Tablespoon Pure Honey
- 1/4 Cup Diced Mango
- 1/4 Cup Chopped Spinach
- 1 Egg
Honey Glazed Icing (Optional)
- 1/4 Cup Plain Yogurt
- 1 Tablespoon Pure Honey
Instructions
For Mango Spinach Oatmeal Muffin Pupcakes
- 1Preheat oven to 350° F. Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together, flour, baking powder and oats. Set aside.
- 3In a large mixing bowl add olive oil, yogurt, honey, mangoes spinach and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- 7Pipe, drizzle, or spread honey glazed icing onto the pupcakes. (optional)
For Honey Glazed Icing (Optional)
- 1In small mixing bowl beat yogurt and honey together on medium speed.
- 2Pipe, drizzle, or spread honey glazed icing onto the pupcakes.
