Have you ever realized that you were barking up the wrong tree?

Well, I sure have.  There’s this tree outside of my apartment.  For years, I’ve watched squirrels climb up and down that tree.  I’ve watched patiently from my window waiting for the moment that I would actually get to catch one.  I’ve even watched some of these squirrels scurry on to our deck.

So, every day on our walks, I always made a point to bark up that tree.  At some point, I knew that I would eventually get one of these squirrels to come down so I can grab one.

I did all the things a pup was supposed to do.  I’d walk around the tree without making a sound.  I’d wait patiently by the trunk for the squirrel to make the right move.  I’d even used the right tone of bark with the thought that I’d lure one right to me.  However, nothing ever happened.

It turns out that squirrels don’t even live in this tree.  They simply hop from one tree to the other never making their home in any place I could actually catch them.

For one time in my life, I actually felt a little heartbroken.  I spent years chasing a dream by focusing on the wrong thing.  At this point, I had to start all over.  And, honestly, I spent so many years focusing on one dream that the unknown of where to go next was completely scary.

In that moment, it was time for me to toss out all of my thoughts and insecurities.  I knew it was time to simply go back to basics.  It’s like they say…

In order to go one step forward, sometimes you have to take two steps back.

I’m sure many of us have had that problem.  How many times have you heard of pups (or humans) who’ve spent days, weeks, months and sometimes even years working on a project or dream and realize that they have to start all over again?  Believe me, we’ve all been there at some point in our lives.

However, going back to basics is probably the best thing for you to do in those moments.  It allows you to ask yourself those hard questions.  Was I focusing on the wrong thing?  Is this really my dream?  How can I re-strategize to make the project better?

Starting with a fresh pair of eyes and a clean slate allows those dreams to appear much clearer.  And, it might be a little scary, annoying or daunting to start over from scratch, it still allows you to dream better and bigger than you did before.  The key is to keep your mind open and your heart happy so you can recognize those new dreams and opportunities as they come your way.

As for me.  My squirrel chasing days are over.  My dream chasing comes in the form of my pupcake portfolio.  Through this new dream, I’ve gotten to sample over 100 different pupcakes and increased my wealth of stories with each one.  So…

  • 10 - 12 Mini Pupcakes

Ingredients

Carob Peppermint Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • 1 Teaspoon Pure Peppermint Leaves
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Egg

Peanut Butter Frosting

  • 1/4 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

For Carob Peppermint Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder, carob powder and peppermint leaves. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 7Spread or pipe peanut butter frosting onto the pupcakes.

For Peanut Butter Frosting

  • 1In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy.
  • 2Spread or pipe peanut butter frosting onto the pupcakes.
