At least that’s the rule in my house.  Mom will never let me eat more than one pupcake per batch.  No matter how hard I try.

Pupcakes are absolutely delicious, and it’s no secret that I absolutely adore them.  Each one has its own special flavor attached to a memorable story.  Believe me, I have no problem sampling every last pupcake I can get my paws on.

Given the chance, I will eat the entire batch without hesitation.  Every crumb and every garnish is fair game.  I’ll even chew through the paper if I have to.

The moment Mom pulls them from the oven, I start pacing the floor.  It doesn’t matter if they’re still hot.  I can work around it.  As long as Mom is dishing them out, I have no qualms about eating them.

But you know what, devouring every last pupcake isn’t a good idea if I want to continue to build my pupcake empire. 

As I’ve mentioned before, each pupcake recipe is connected to a new story, lesson, or experience.  Each pupcake recipe leads to an enhanced portfolio, which leads to continued wealth.  Mom’s philosophy is pretty simple.

You can’t have new experiences if you’re constantly sampling from the same pupcake flavor over and over again.

Sure, it’s cool to come back from time to time to eat a pupcake flavor you’ve had before.  However, if you’re constantly eating the same type of pupcakes over and over again, you’ll never get to participate in all the new pupcake experiences the world has to offer.

More importantly, eating the whole batch in one sitting can completely deplete you of your energy, interest, or room in my stomach to even remotely want to try a new flavor.  So after you try one, savor the flavor, capture the memory, write the story, and get ready for the next new experience that’s coming your way.

Mom’s “one pupcake per batch” rule is what I need to keep me accountable.  She’s the ultimate accountability partner.

Honestly, I believe accountability is the greatest trait that a person (or pup) can have.

When you’re working towards a goal or dream, such as building a pupcake portfolio, you need support and positive reinforcement.  Having people in your corner who hold you accountable to those dreams keeps you responsible and centered.

Your accountability partners tell you “no” when you need to hear it, and keep you going during those times when you feel like giving up.  Like I said earlier, there have been many times when I’ve wanted to devour the whole batch, however Mom has kept me focused on the greater goal of building my pupcake portfolio.

Your squad should be filled with people who hold you accountable and encourage you along the way to reaching your dream.  In a world full of naysayers, haters, dream killers, you need these people (or pups) in your life to keep you motivated, give you a safe place to live out your dreams, and block out the negative noise.

So, as you continue to build your squad make sure you hang with people (and pups) who keep you encouraged and hold you accountable.  Believe me, your accountability partners will become the support you need to achieve your goals.

Ingredients

Banana Carob Chip Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1 Mashed Banana
  • 1 Egg
  • 2 Tablespoons Carob Chips

Peanut Butter Frosting

  • ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

Yields: 12 – 14 Mini Pupcakes 

For Banana Carob Chip Pupcakes

  1. Preheat oven to 350° F.  Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour and baking powder. Set aside.
  3. In a large mixing bowl add olive oil, mashed banana, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Stir in carob chips.
  6. Fill each cupcake liner with 1 tablespoon of pupcake mix.
  7. Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean.  Remove from pan and cool on wire rack.
  8. Spread or pipe peanut butter frosting onto the pupcakes.

For Peanut Butter Frosting

  1. In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy.  Frosting should have the consistency of whipped cream.
  2. Spread or pipe peanut butter frosting onto the pupcakes.
