Perfect for a yummy doggie Thanksgiving.

Happy Thanksgiving everyone! Today, we gather around the table and show appreciation for everything we’re thankful for.

Well, at least my humans do. Me, well, I just wait for someone to sneak me a piece of turkey under the table.

But this year I’m a little more thankful. In addition to my lovely human family, I’m also extremely thankful for all of the awesome PUPCAKES I’ve got to sample so far.

Especially, this Turkey Meatloaf Pupcake With Mashed Potato Frosting.

Mom has really allowed me to channel my inner foodie with this pupcake. While my humans are passing plates back and forth and talking about that time mom had to wear those braces, I’ll be chowing down on this piece of turkey heaven. Try this recipe and let us know what you think.

Ingredients

For Turkey Meatloaf Pupcake

  • ½ Cup Ground Turkey Breast
  • 1 Teaspoon Fresh Parsley
  • 1 Teaspoon Oregano
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Unseasoned Bread Crumbs
  • 2 Tablespoons Shredded Zucchini
  • 1 Egg

For Mashed Potato Frosting

  • ⅓ Cup Whipped Potatoes
  • ¼ Cup Plain Yogurt
  • 1 Tablespoon Chicken Broth
  • 1 Teaspoon Oregano

Instructions

Yields: 8 Mini Meatloaf Pupcakes

For Turkey Meatloaf Pupcake

  1. Preheat oven to 350° Sprinkle bread crumbs into bottom of mini pie pans.
  2. In a large mixing bowl add turkey, parsley, oregano, olive oil, bread crumbs, zucchini, and egg. Stir until completely mixed.
  3. Fill each mini pie pan with 1 tablespoon of meatloaf and bake for 15 – 18 minutes. Pupcakes are done when meat temperature is 160°. Remove from pan and cool on wire rack.
  4. Spread or pipe mashed potato frosting onto the pupcakes.

For Whipped Potato 

  1. Fill a 1½ quart pot with water, and bring to a rolling boil. Once boiled, add both unpeeled potato. Cook potato for approximately 20 – 30 minutes until tender. Remove from heat, and peel skin off potato while it’s still warm.
  2. Place potato in a large mixing bowl and whip on medium speed until creamy.
  3. Measure ⅓ cup of whipped potato. Set aside. Freeze remaining potatoes to be used for later.

For Mashed Potato Frosting

  1. In large mixing bowl beat whipped potatoes, yogurt, chicken broth, and oregano, together on medium speed. Mix until creamy. Frosting should have the consistency of whipped potatoes.
