Sugar Ditches Job Searching For These Banana Zucchini Pupcakes

A few months ago, I was laid off from my job at BarkScent Magazine.

I honestly can’t say that I was surprised.  The company had been going through a lot of changes.  They were creating new teams and departments left and right.  Pups that had worked at Scent for years were suddenly retiring.  And, the biggest clue of all, budgets were being cut for no apparent reason. 

When I got the news that my position was being eliminated, I was filled with several different pup emotions.  I was nervous about the next step, but happy I didn’t have to go to work the next day.  I was worried about my pup finances, but excited that I was finally going to get to work on my dream full time.

With every single pup emotion that I felt, the biggest of all of them was simply relief. 

I was relieved of the expectation to perform in a place that I wasn’t happy.  I was relieved of the pressure of pushing my talents to the side because they didn’t fit with in a pup corporate environment.  More importantly, I was relieved of any excuse to put my dreams on hold because they didn’t fit into some other pup’s standards.

This was the first time in my pup life that I had a passion.

So, for the first several weeks of my layoff, I spent time reflecting on my next move for myself and my pup business.  I assessed what I was doing wrong and how I can move forward with my dreams. 

During this reflection period, I came to the conclusion that I was never going to look for a job again.  From this point forward, that meant I was only interested in opportunities.

I was looking for opportunities that would help me grow personally and professionally.  Even if it meant I was going to have to find another pup corporation to work in so I could fund my business, it had to be an “opportunity” instead of a “job.”  As Lolly Daskal stated…

When you stop chasing the wrong things, you give the right things a chance to catch you.

For my entire pup adult life, I’ve had the same pup career routine.  Search for a job, get a good job, suffer from pup anxiety as a result of this supposed “good job” I now hate and then repeat the cycle over again.

However, something a little different happened while I was working this last job.  I found my passion and decided to turn it into a business.  And, ironically, this made everything about working my job at BarkScent mediocre.

I realized that jobs have the tendency to do that quite well.  It can make life seem like you’re running on a treadmill to nowhere.  Jobs have you feeling like it should be Friday in the middle of Tuesday, and have you praying for a random snow day.  And, that unhappiness can trigger pup burnout with no warning. 

Opportunities, however, give you purpose.  Whether you’re working for yourself or at a pup company, you find the joy in what you’re doing.  Opportunities give you vision and creative energy.  It awakens all of your pup ambitions and inspires you to see the possibilities. 

The key is learning how to recognize the right opportunity the moment it reveals itself.  And, that definitely takes practice and pup self-reflection. 

So, from this point forward this pup will only search for opportunities.  Because no “job” is going to hold me back from living out my pup dreams.

  • 12 – 14 Mini Pupcakes

Ingredients

Banana Zucchini Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Mashed Banana
  • 1 Egg
  • 1/4 Cup Diced Zucchini

Peanut Butter Cream Frosting

  • 1/4 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

For Banana Zucchini Pupcakes

  • 1Preheat oven to 350° F. Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt, banana and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Stir in diced zucchini.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 8Spread or pipe peanut butter cream frosting onto the pupcakes.
  • 9Add a slice of zucchini on each pupcake for garnish (optional)

For Peanut Butter Frosting

  • 1In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy.
  • 2Spread or pipe peanut butter frosting onto the pupcakes.
  • 3Add a slice of zucchini on each pupcake for garnish (optional)
