Life without goals to aim for is absolutely boring.
So, I’ve been setting and reaching goals from the time I was a little pup. For instance, I love climbing underneath the covers. It’s one of my places to go when I just want a moment to myself. Sometimes a girl just needs her alone time.
When I was younger, I climbed my way into this cozy blue blanket. It was all fun and games until I got stuck and couldn’t get out. I thought I’d never see the light of day again. But, just like Dori says…
“Just keep swimming.”
So, I did. And finally saw the light shining from a hole that would lead me out. I learned then and there that’s what life is about, really. Setting goals and working to achieve them, no matter how scary and dark it gets.
Now, whether it’s leaping a little higher to jump on Mom’s bed, grabbing that interesting sock out of the hamper, or even swiping a pupcake while Mom’s taking a picture of it, I’m going to try. Even if I don’t succeed, the adventure to get there is worth it. Then I can at least share all my stories with you.

Ingredients
Peanut Butter & Jam Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- ¼ Cup Olive Oil
- ⅓ Cup Plain Yogurt
- 1 Tablespoon Honey
- 1 Egg
Strawberry Jam Filling
- ½ Cup Strawberries, stems removed
- ¾ Teaspoons Apple Cider Vinegar
- ¼ Cup Honey
Peanut Butter & Jam Pupcake Frosting
- ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
- 3 Tablespoons Plain Yogurt
Instructions
Yields: 12 Mini Pupcakes
For Peanut Butter & Jam Pupcakes
- Preheat oven to 350° Line 12 1.75” inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add oil, yogurt, honey, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Cut small hole in middle of pupcake. Fill with strawberry jam filling.
- Spread or pipe whipped peanut butter and jam pupcake frosting onto the pupcakes.
For Strawberry Jam Filling
- Put strawberries, apple cider vinegar, and honey in a saucepan. Cook and stir occasionally for 40 minutes over low heat until juices are released.
- Bring pan to a boil over medium heat. Cook and stir occasionally for 15 minutes until mixture registers 210 degrees on a candy thermometer.
- Cut small hole in middle of the pupcake. Fill pupcake with strawberry jam filling.
For Peanut Butter & Jam Pupcake Frosting
- In large mixing bowl beat, yogurt and peanut butter together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
- Spread or pipe whipped peanut butter frosting onto the pupcakes.
