When I was just a young pup, I used to wish that I knew how to balance a ball on the top of my nose, catch a Frisbee, or anything that would get me noticed. As I got a little older, I soon realized that I had something much greater. It’s something that has helped to mold me into the fun loving, cuddly, imaginative pup I am today. It’s the one thing that gets me all the attention I crave in the world. In a nutshell…

My curiosity has helped me learn. It’s made me adventurous and observant. I may not know how to balance a ball on my nose, but I can certainly find that pen Mom’s been looking for over the last 6 months. I also have the knack to get any human to instantly pay attention to me and automatically fall in love with me.

Ingredients

Tagalong Pupcakes

  • ½ Cup Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • ¼ Cup Olive Oil
  • ⅓ Cup Plain Yogurt
  • 1 Egg

Tagalong Pupcake Filling & Frosting

  • ¼ Cup of Carob Chips
  • 1 Teaspoon Olive Oil
  • ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

Yields: 12 Mini Pupcakes

For Tagalong Pupcakes

  1. Preheat oven to 350° Line 12 1.75” inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, and carob powder. Set aside.
  3. In a large mixing bowl add yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Cut small hole in middle of the pupcake. Fill each pupcake with tagalong pupcake filling.
  7. Spread or pipe remaining Tagalong filling on top of the pupcakes.

 For Tagalong Pupcake Filling & Frosting

  1. In a small bowl, heat carob chips and olive oil in microwave in 30-second increments for 1 to 2 minutes until melted.
  2. In large mixing bowl beat, melted carob chips, peanut butter, and yogurt together on medium speed. Mix until creamy.
  3. Cut small hole in middle of the pupcake. Fill each pupcake with tagalong pupcake filling.
  4. Spread or pipe remaining Tagalong filling on top of the pupcakes.
