Vacations come in many different shapes, sizes, and lengths. They can be wild and free or calm and relaxing. Fun and playful or reflective and nostalgic. That’s the beauty of them. Vacations can be anything you want them to be. In a nutshell…

Vacations give us that break our mind, body, and spirit need to rejuvenate and replenish. It allows those little pesky things in life to realign themselves to work out in your favor. That’s why I loved the road trip Mom and I took last year. I got to spend some time with Mom, take in the sights, and when we got back home that squirrel that kept making faces at me in the tree across my window was no longer there.
This Carob Berry Fudge is dedicated to the sweetness every vacation brings.

Ingredients
For Carob Berry Fudge
- ½ Cup Coconut Oil
- ¼ Cup Dog-Friendly Nutella
- ¼ Cup Carob Powder
- 2 Tablespoons 100% Pure Maple Syrup
- ½ Cup Mixed Berries (Raspberries, Blueberries, & Blackberries)
Dog-Friendly Nutella
- 1 Cup Creamy Peanut Butter (unsalted with no added sugars)
- ¼ Cup Carob Chips
- 2 Tablespoon Carob Powder
Instructions
Yields: 8 – 10 Fudge Cups
For Dog-Friendly Nutella
- In a small bowl, heat carob chips and olive oil in microwave in 30-second increments for 1 to 2 minutes until completely melted.
- In a large mixing bowl, add melted carob chips, peanut butter, and carob powder. Mix until all ingredients are combined.
- Set aside ¼ cup of mixture and refrigerate remaining Nutella in a container or jar until ready to serve.
For Carob Berry Fudge
- Line 1.75-inch mini-muffin pan with paper baking cups and set aside.
- In large bowl combine coconut oil, dog-friendly nutella, carob powder, maple syrup. Beat on medium speed until combined.
- Add in mixed berries and stir.
- Fill each cupcake liner with 1 tablespoon of fudge mix and freeze overnight (approximately 6 hours).
- Keep fudge in the freezer until you’re ready to serve. The fudge will melt if left out for too long.
