The perfect way to celebrate Eat A Red Apple Day!
December is officially here, and you know what that means. A month of celebrations, holiday parties, and lots of festive foods. And of course Pupcake Sugar doesn’t want to be left out from all of the fun.
So, this month we’re partying all month with delicious PUPCAKES, of course.
We’re kicking the celebration off with these divine and delish Apple Maple Pupcakes with a little Salmon garnish.

Ingredients
For Apple Maple Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- 1 Tablespoon Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 1 Teaspoon 100% Maple Syrup
- 1 Egg
- 3 Tablespoons Shredded Smoked Salmon (We used pieces of Hot Smoked Sockey Salmon from Taku)
For Maple Frosting
- ¼ Cup Cream Cheese
- ⅓ Cup Plain Yogurt
- ½ Cup Brown Rice Flour
- 2 Teaspoons 100% Maple Syrup
Instructions
Yields: 8 – 10 Mini Pupcakes
For Apple Maple Pupcakes
- Preheat oven to 350° Line 8 – 10 1.75” inch mini-muffin pan with paper baking cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, apple sauce, maple syrup, and egg. Beat on medium speed for about 1 minute until combined.
- Add dry ingredients into the mixture and blend for about 1 minute until mixed.
- Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe maple frosting onto the pupcakes.
- Add shredded salmon at the top of the pupcake for garnish
For Maple Frosting With Salmon Garnish
- In large mixing bowl beat cream cheese, yogurt, and maple syrup together on medium speed. Mix until smooth.
- Gradually add in flour. Beat on high until creamy. Frosting should have the consistency of whipped cream.
- Add shredded salmon at the top of the pupcake for garnish
