Pina Colada Pupcakes for the dog you love to spoil

Mom loves to dance.

Secretly, so do I.  Ok.  Not really.  I just like chasing the socks she usually has on her feet when she’s dancing around the house.  When Mom moves to the right, I follow those colorful socks to the right.  When she dances to the left, I prance to the left with her.

After years of our dancing routines, I’ve come to notice that the words of each song reflect how Mom moves to the beat.  When the words are fun, upbeat and positive, she moves quicker and is lighter on her feet.  This makes it more challenging to catch those socks.  And, honestly makes the dance game a lot more fun.

However, when the words seem mellow, reflective and sometimes even sad those socks move slower.  Sometimes those socks on Mom’s feet don’t even move at all.  They simply sit propped on the sofa or Mom’s bed.  Don’t get me wrong.  Those socks are a lot easier to catch, but the game is a lot less fun.

Although, I’m not completely sure what every word to every song means, I can definitely detect mood.  And, I’m extremely convinced and witness to the fact that….

Our words have power.

The words and phrases we use throughout the course of the day can not only reflect how we feel about ourselves, but also can reflect how other humans (and pups) feel being around us.  Let’s be real, we all want to be around people (and pups) who make us feel good.  No one wants to be around anyone who’s in a bad mood.

We’ve said it time and time again.  The one key is to remain optimistic and to speak in positive terms.

We’re taught or encouraged to always see the good and focus on the silver lining.  That’s great and all, but honestly life sometimes just sucks.  Sometimes it’s too hard to see the silver lining

So, in those situations it’s important to choose your words with extra caution. 

There are ways to vent, complain, and even feel a little down, while using positive reinforcement to lighten the mood.  For instance, instead of saying “This day is an absolute disaster” try “I’m one step closer to the weekend.”  Or, instead of “I absolutely hate my job” change your phrase to “I’m preparing myself for the opportunity of my dreams.”

Reframing your words to sound more hopeful, optimistic, and all around more positive will shift the way you look at a tough situation.  It’ll even help lighten the heaviness of that stressful situation.

As a pup, we choose to always bark wisely.  We only bark when we have something to say that we feel will benefit our well-being.  So, be encouraged to use your words the same way.  It’ll ultimately keep you positive and optimistic.  It will also help others around you enjoy being in your presence and become more positive as well.

  • 10 – 12 Mini Pupcakes

Ingredients

Piña Colada Pupcakes

  • 1/2 Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Egg
  • 1/4 Cup Fresh Diced Pineapples
  • 10-12 Strawberries for Garnish (Optional)

Coconut Cream Frosting

  • 1/2 Cup Coconut Cream

Instructions

For Piña Colada Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Stir in diced pineapples.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 8Spread coconut cream frosting onto the pupcakes.
  • 9Add a strawberry on top for garnish (optional).

For Coconut Cream Frosting

  • 1Refrigerate coconut cream over night to allow it to get hard.
  • 2In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
  • 3Spread coconut cream frosting onto pupcakes
  • 4Add strawberry on top of frosting for garnish (optional).
