Having something to look forward to makes life so much more interesting. Don’t you think?
At least, that’s what I believe. I guess that’s why I get excited about everything. Big things. Small things. Extravagant things. Simple things. It doesn’t matter to me. As long as it’s positive, I get excited and look forward to them all.
I jump for joy when the doorbell rings. I look forward to taking car rides. I even get excited when I find an interesting piece of string laying on the floor.
One day last week, I could hear Mom walking up the steps to our apartment. So, I got ready to greet her at the door like I usually do. As the door opened, I saw Mom was holding a small box in her hand. I couldn’t help but get excited about what was in it.
She sat the box on the dining room table and went to put her bags down. I sat and stared patiently at the box, while wagging my tail and trying to guess what was in it. Was it for me? Was it for Mom? I don’t know. But, I could definitely smell some sort of cookie in the box. Therefore, I wasn’t moving until Mom opened it.
After a few minutes, Mom comes back to the dining room holding a pair of scissors. She sits down and starts to cut the tape off the box. I jump in pure anticipation. The suspense was killing me and I could hardly contain myself. She pulls opens the box and begins to pull the contents out. And, there it was (wait for it.)…

Completely underwhelmed, I watched Mom pull the rest of the contents out of the box and put them on the table. The cookie I smelled was the biscuit that came with it. And since, I have pupcakes I wasn’t too interested in that biscuit either. So, I rolled my eyes and walked off. In so many words, the thrill was gone.
The point of the story isn’t about the pitiful surprise that was waiting for me in the box. Or, the fact that I was completely underwhelmed by the whole situation. I’m not even going to discuss the fact that I run at the sight of any kind of medication.
The point is to express the importance of having something to look forward to during your day; your week; your month; your life. In a nutshell…
Looking back gives you regrets. Looking ahead gives you opportunities.
So, get excited about all of the great things ahead of you. Not only does it give you opportunities, but it keeps life interesting. Having something to look forward to gives us purpose, keeps us going when things get a little tough, and keeps us hopeful.
More importantly, it keeps life from becoming absolutely boring.
A life full of daily routines, to-do lists, and all things ordinary day-in and day-out can get old sometimes. Looking forward to the good things coming also spices up your life. Just think of all the stories and fun memories we’ve created by simply looking forward to some event in our life. Remember that vacation you took? I’m pretty sure simply planning and looking forward to that trip made you feel great even before it was time to leave.
And, sure looking forward to the small box Mom walked in the house with didn’t turn out to be the greatest surprise ever. However, it gave me yet another story to tell, a few minutes of positive energy, and of course another pupcake to add to my portfolio.

- 10 - 12 Mini Pupcakes
Ingredients
Chicken Breast
- 4 ounces Boneless, Skinless Chicken Breast
Chicken & Waffle Pupcakes
- 1/2 Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Olive Oil
- 1/3 Cup Plain Yogurt
- 2 Tablespoons 100% Pure Maple Syrup
- 1 Egg
- 10 - 12 Boneless, Skinless Chicken Breast Pieces
Maple Glazed Frosting
- 1/4 Cup Plain Yogurt
- 1 Tablespoon Pure Maple Syrup
Instructions
For Chicken
- 1Preheat oven to 350° F. Line baking sheet with foil and place chicken on sheet.
- 2Bake chicken for 25 – 30 minutes until done. Use a meat thermometer to check temperature. Chicken is fully cooked at 165° F.
- 3Cut chicken into small pieces. Set aside 10 – 12 cubed pieces for the pupcake.
- 4Refrigerate or freeze the other pieces. You can use them as a treat for your pup later.
For Chicken & Waffle Pupcakes
- 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together flour and baking powder. Set aside.
- 3In a large mixing bowl add olive oil, yogurt, maple syrup and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 6Place 1 piece of boneless, skinless chicken breast into pupcake cup. The chicken should be cooked prior to placing in the pupcake mixture.
- 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- 8Pipe, drizzle, or spread maple glazed icing onto the pupcakes.
For Maple Glazed Icing
- 1In small mixing bowl beat yogurt and maple syrup together on medium speed.
- 2Pipe, drizzle, or spread maple glazed icing onto the pupcakes.
