Sugar Takes A Snow Day & Eats These Apple Ginger Pupcakes

I’m all for a good snow day.

I don’t need a whole blizzard to keep me cooped up in the house for a week.  One snow day is all that I need.  Now don’t get it twisted.  I’m not one of these pups that revels in making pup snow angels or sledding with their humans down a huge hill.  I’d much rather stay snuggled under a warm blanket sitting with my mom on the couch.

As a budding pup business owner, I balance a lot of different tasks.  Not only am I working on my pup-business plan at night after all of my humans go to sleep.  But, I also work during the day while Mom is at her job and later spend some snuggle time with her once she gets home.  So, a nice snow day off is great. 

I could sleep in a little later, snuggle with Mom during the day and have a little extra energy to work on my pup-business plan later on during that night.  So, when Mom got the call that her office was closed due to the snow I was excited.  Well…until I found out through word of “bark” that my workplace was open.

I’m sure you’re wondering; what kind of job does a pup like me have?

Well, I work in marketing for BarkScent Magazine, the number one lifestyle magazine for pups.  Never heard of it?  Good.  It’s a magazine exclusively for dogs and is distributed secretly through dog toys, tissue paper and other materials. 

Ever wonder how your dog always knows that bag is for her or wonder why he gets excited over a piece of crumpled paper?  It means that the new issue of BarkScent has just been delivered.  The magazines are constantly in print, and so the office is never closed.

So, when Mom was off for a snow day, there was no way I was going to be able to sneak off to work.  But, how could I tell my boss that I needed a day off.  There was no way that he was going to be understanding.  His human is never home.

I paced the floor for several minutes trying to figure out how I was going to explain myself.  And, then I started to think about how dangerous it was going to be to trek in the snow to the BarkScent office.  I also started to remember how much time would be wasted with me worrying about how to go unnoticed with Mom as I would be missing for hours. 

And, then I realized that going in to the office was not an option.  I needed the snow day for me and I wasn’t risking my physical and mental pup-health just to be in the office.  This pup-anxiety over wondering what my boss was going to say was one of the main reasons I decided it was time to work on starting my own business venture.

When you say ‘yes’ to others, make sure you are not saying ‘no’ to yourself.

So, I decided to say “yes” to myself that day.  I set aside the anxiety of what other pups were going to say about me not being in the office and stood up for myself  by not being afraid to ask if I could work from home. 

I was even shocked that my pup boss agreed with it and allowed me to do just that.  I was able to get some extra rest, have a little snuggle time with my Mom, finish a project I was working on for BarkScent and finish up my own business plan.

Many of us pups are quick to say “yes” to our humans or other pups.  But, sometimes we need to take a moment for ourselves.  Saying “no” shows everyone else what your standards are.  Once others understand those standards, they’ll usually yield to them.  And, if they don’t, it’s simply time for you to develop a pup plan and move forward to something new.

These Apple Ginger Pupcakes are dedicated to saying “yes” to yourself, even if it means saying “no” to someone else.

  • 10 – 12 Mini Pupcakes

Ingredients

Apple Ginger Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Ginger
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Pure Maple Syrup
  • 1/3 Cup Unsweetened Applesauce
  • 1 Egg

Peanut Butter Frosting

  • 1/4 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

For Apple Ginger Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder and ground ginger. Set aside.
  • 3In a large mixing bowl add olive oil, applesauce, maple syrup and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 7Spread or pipe peanut butter frosting onto the pupcakes.

For Peanut Butter Frosting

  • 1In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy.
  • 2Spread or pipe peanut butter frosting onto the pupcakes.
