Sugar Finally Gets Her Vacation & Treats Herself To These Blueberry Peanut Butter Pupcakes

Today, is my first day back from vacation.  And, after a week of laying in the sun, laughing with my friends, and disconnecting from all things pup business ownership, I’ve come to this conclusion…

Vacations are essential to the pup soul.

Honestly, I should’ve taken one awhile ago.  However, as a pup business owner, it’s very easy to let that vacation time slip through the cracks.  We spend day after day working on our next project, planning how we’re going to achieve our next goal and organizing our creative thoughts. 

Before you know it, those days have turned into weeks and those weeks have turned into a year.  The actual thought of taking a real vacation didn’t even occur to me until a few weeks ago.

I had just gotten a request to do a pupcake pop-up shop at pup business.  Not only would this opportunity help me build relationships with other pup business owners in the area, but it would also be a great way to create some brand recognition for Pupcake Sugar.   

I was extremely excited about the opportunity, and knew I had to get started working on this project immediately.  But, as I sat down and started to paw out some ideas, I was having trouble. 

First, I tried to think of a theme.  I thought of everything from Peanut Butter Heaven all the way down to Poodle Couture.  Nothing stuck, so I moved on to the pupcake menu.  Believe it or not, I have so much trouble trying to think of a pupcake flavor that would work. 

I actually stared at my ingredients with the blankest stare on my face.  I felt like my pupcake creativity was gone and I was completely wiped out.

It was in that moment, when I realized that a vacation was long overdue.  There was no way I was going to be able to be inspired to take on this project without some much-needed rest. 

So, I made a quick bark to my best friend Cynn.  Before I knew it, we were both on our way to our favorite beach for a few days to relax and have a little pup fun.  In the words of Anne Lamott…

Almost everything will work again if you unplug it for a few minutes…including you.

And, that’s exactly what I did.  Unplug.  No work.  No answering emails.  Just me and a good time with my BFF.  In fact, a morning smoothie order inspired my first pupcake option on the menu.

I’m not going to preach to you or anyone else why it’s important to take a vacation.  I think we all know how important they are.  The problem is that sometimes we pup business owners get so busy that we just put off scheduling them.  It’s amazing that we can juggle a million different pup-responsibilities at once, but somehow drop the ball taking a break.

So, I decided that instead of falling into the “no vacation this year trap” again, I was going to mark off 2 times a year for my pup-vacation.  This way those vacation days will already be on my calendar, and since they’re the same time every year, it’ll be easier to plan my schedule around those vacations.

  • 10 – 12 Mini Pupcakes

Ingredients

Blueberry Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Egg
  • 1/4 Cup Blueberries

Peanut Butter Cream Frosting

  • 1/4 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

For Blueberry Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Stir in blueberries.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 8Spread or pipe peanut butter cream frosting onto the pupcakes.

For Peanut Butter Cream Frosting

  • 1In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy.
  • 2Spread or pipe peanut butter frosting onto the pupcakes.

  • Hi… thanks for sharing this recipe, Our little Pug, Coco, is going to love them! Can I just ask, how long will they last refrigerated and can they be frozen??

    • Thank you so much for reaching out. I actually prefer to keep the pupcake in the freezer. They can last several weeks (about 2 months) while storing in the freezer. To store them, wrap them in in groups of 3 or 4 in wax paper and then put them in a freezer bag. When you’re ready to serve one, take it out and let it defrost for 5-10 minutes on the counter. Please let me know how the pupcakes turn out.

  • Hello! I’m going to try these tomorrow, but wanted to make full sized cupcakes. How long would you recommend baking? Also, love your posts and recipes. Thanks!

      Thank you so much for reaching out. For full sized pupcakes, I’d start with 13 minutes baking time. If they aren’t done after 13 minutes, I’d bake them in 2-3 minute increments until they are done. The pupcakes are done when you stick a toothpick them and it comes out clean. The top of the pupcake should also be firm. Please let me know how the pupcakes come out. I’d love to hear.
